Brubaker’s, located on the corner of Owens Rd. and University Dr., is expected to end construction and open the doors of their new restaurant by November of this year.
General Manager Carlen Charleston says that a new building continues their growth process and helps create new ideas.
The menu currently consists of combos of either a stuffed potato, beef sandwich, or a cheeseburger. Sausage, ribs, and brisket are available by the pound. Charleston will be adding some new items to the menu.
He will employ new services for the convenience of the customers, such as a delivery, catering for events, and management internships for university students.
Charleston also plans to team up with the university to install a video system in the new restaurant, which will display promos and commercials produced by students.
Brubaker’s Barbecue & Burgers was established in Prairie View, Texas on March 23, 2010. Since their grand opening, the food in their concession stand trailer has been the buzz around the campus and in the surrounding community. “I like this place because it is local, yes, but also there is good quality food for good quality prices,” said April Fullwood, a senior communications major.
“With all the money we earned over the years, let’s put it back in Prairie View. Prairie View has had nothing for so long, and we thought it was nice to build up our home town and see it thrive,” said Charleston.
He and his two brothers decided to collaborate on this investment to build up the community in which they have been raised from childhood. He says he wants to be a breath of fresh air in the community and show everybody, even future business seekers that they too can be economically successful here in Prairie View. People will support it.
Charleston said, “We don’t mind competition because it’s better for the customer base. Besides, Brubaker’s can handle it!”
Charleston is not sure if Brubaker’s will be expanding to other areas as a franchise. He just wants to satisfy his current customers. He knows students love it and students also love low prices so he wants to work on accommodating them first.
Brubaker’s was not originally supposed to expand beyond the concession trailer, but they credit the students and local communities for the phenomenal response beyond expectations.
The restaurant is within walking distance from campus, making it accessible to all.
